It’s hard to believe it’s already been five years since we at Sarutahiko Coffee served our first customer.
I haven’t forgotten, nor will I ever forget, those challenging early days when we opened our Ebisu Flagship Store. We had to take things day by day, as we worked to see the store through its first month.
The goal I laid out at the beginning was to become a coffee shop that brings a smile to your face with just one cup of coffee. This hasn’t changed at all, nor will it ever.
On my last day at college, one of my professors asked me the question, “Do you know the verb form of ‘wakai (=young, 若い)’?”
“wakasa (=substantive form of young, 若さ)” and “wakaku (=continuous form of young, 若く)” came to mind, but these are adjectives. I didn’t know the answer.
It was “waku （=flow out, 湧く）”, and this was the last thing this professor taught me. Ideas flow out. Hope flows out. Energy flows out.
When I started Sarutahiko Coffee, as I was nearing thirty, I was determined to keep my passion flowing for the rest of my life.
Just three years from now, not only Tokyo but Japan as a whole will bear witness to what will surely be one of its finest hours. You can already feel the positive energy.
We’ll continue to bring the same passion to what we do. I hope that our positive vibes will inspire our customers.
Above all else, we want to bring a smile to your face with just one cup of coffee.
